4 chicken halves
1 onion, sliced
1/2 C. pitted Kalamata olives
4 cloves garlic minced
Juice & Zest of 1 lemon
1/4 C. chopped fresh oregano or (1 T. dried)
1/4 C. chopped fresh parsley (1 T. dried)
2 C. chicken broth
1 C. white wine (optional)
Salt and Pepper to taste
1. Toss the chicken halves in a bowl with the onions, olives, garlic, lemon
juice and zest, oregano, and parsley.
2. Add salt and pepper to taste. Bake uncovered at 350-degrees for 1 hour.
3. Remove from oven, deglaze pan with chicken broth and wine. Pour over
chicken. Serve with rice or couscous.
