Chicken, Tomato Bruschetta
6 slices of french bread
2 cups cooked chicken (shredded or sliced)
12 slices of fresh tomatoes
1/2 cup chopped basil
1/2 cup shredded Parmesan cheese
6 oz. thinly sliced mozzarella cheese
1/2 cup melted butter
1 tsp. onion salt
2 tsp. kosher salt


1. Cut french bread into 1 inch slices and place on a baking sheet. Brush butter over top and season each piece with onion and kosher salt. Broil at 500 degrees for 5-8 minutes or until the tops are golden brown.
2. Place tomatoes over warm bread and season again with onion and kosher salt. Sprinkle 1 tsp. basil over tomatoes.
3. Arrange chicken over tomatoes then top with Parmesan and mozzarella cheese. Broil again at 500 degrees for 5-8 minutes or until cheese is melted. Remove from oven and sprinkle fresh basil over top.
