Chocolate Chip Mint Cookies
1 Lb Unsalted Butter, softened
2 Cups Brown Sugar
1 ½ Cups Sugar
3 Eggs
2 teaspoons Vanilla extract
5 Cups Flour
1 Cup Oats
¼ C. Cream of Wheat
1 ½ t. Salt
1 ½ t. Baking Soda
1 C. Choc. Mint Chips (Andes)
1)Pre heat Oven 350F
Using stand mixer or in large bowl with hand mixer.
2) Cream together Fats and Sugars. Mix on medium for 2-3 minutes.
3) Add in Egg and Vanilla. Mix until yolk is broken and incorporated.
4) Mix in dry ingredients. Pre-sift together. Mix until combined. Scrape down sides of bowl.
5) Add in Chocolate Chips/nuts etc. Just stir in. Do not over mix.
6) Drop on cookie sheet 2” balls at least 1” apart.
Bake for 12 minutes.
