Chuck Wagon Fried Potatoes

10-12 white potatoes, washed and sliced
12 oz. sliced bacon cut in 1-inch strips
1 yellow onion, chopped
Fresh chives
8 oz. sharp cheddar cheese, grated
Fresh garlic 2-3 cloves, chopped
1-2 tablespoons Worcester sauce
Dash hot sauce
1 tablespoon olive oil
1 tablespoon butter

In a #12 Dutch oven over about 12 coals, cook the bacon until crisp. Add oil butter, onions and garlic, cook until onions are caramelized. Add potatoes, and add salt, pepper, Worcester sauce, and hot sauce. Stir until potatoes are coated in oil and spices, add more spices to your own tastes. Cook for 15-20 minutes with coals under and on top of Dutch oven. Stir frequently. Check tenderness, when potatoes are cooked to your preferred doneness, stir in cheese and chives. Let sit 1-2 minutes to melt cheese. Serve
