Cinnamon Apple Bread Pudding Cups
2 gala apples, diced
4 Tablespoons butter
1/2 teaspoon cinnamon
2 tablespoons brown sugar
1/4 cup granulated sugar
8 slices French bread, cubed
4 eggs
1 cup milk
1 teaspoon vanilla extract
1/2 teaspoon cinnamon
dash of ground nutmeg
1 cup confectioners’ sugar
dash of milk



1. Preheat oven to 350 degrees. Spray a muffin tin with nonstick spray.

2. In a medium skillet, saute the apples with the butter, cinnamon, brown sugar and sugar for about 5 minutes, or until soft. Set aside to cool slightly.

3. In a large bowl, whisk together the eggs, milk, vanilla, cinnamon and nutmeg. Gently stir in the bread cubes until well coated with the egg mixture.

4. Scoop the bread pudding evenly between 12 muffin cups and bake for
20-25 minutes, or until set and golden brown. Cool for 5 minutes in the pan and transfer to a wire rack.
5. In a small bowl, whisk the confectioners’ sugar and milk until smooth. Drizzle over warm bread pudding cups. Serve immediately.
