Crab or Bay Shrimp Salad


2 cups fresh crab meat or 2 cups bay shrimp
3 stalks of celery, diced
1/2 red onion, diced
1/2 cup mayonnaise
1/2 teaspoon white pepper
juice of 1/2 lemon
1 tablespoon fresh parsley, chopped
1 tablespoon capers, chopped


Combine all of the above ingredients by hand in a large mixing bowl. Chill for
one hour.

Serve on bread with lettuce and sliced red and yellow tomatoes, or on top of
mixed greens.
