Cranberry Biscotti

Cranberry Biscotti
2 1/2 cup flour
1 teaspoon baking powder
1/2 teaspoon salt
1 1/2 cups sugar
1/2 cup butter, room temperature
2 large eggs
1/2 teaspoon Almond Extract
1 1/2 cups dried cranberries
6 oz. melted white chocolate

Preheat oven to 350 degrees

In one bowl, combine: flour, baking powder, salt

In a seperate bowl, combine: sugar, butter, eggs and almond extract

Beat with a mixer, then combine with flour mixture.

Then add: cranberries

Divide dough into two logs, each 1 inch high.
Brush with beaten egg white

Bake for 35 minutes

Remove and let cool for 10 minutes

Slice into pieces, return pieces to baking sheet and bake for 10 minutes more, or until dried


Drizzle with melted white chocolate (6 oz or so)
