Creole Beef and Rice


1/4 pound country sausage
1/4 pound ground beef
1 cup celery, chopped (about 1-2 stalks)
1 onion, chopped
2 teaspoons creole or cajun seasoning, use more or less to taste
3 cups instant white rice, uncooked
2 14 oz. cans canned stewed tomatoes
1 12 ounce vegetable juice, spicy
1 1/2 cups frozen okra, (optional)


Brown meat with onion, celery and Cajun seasoning, stir frequently. Add remaining ingredients. Bring to a boil, cover, reduce heat and simmer 5-10 minutes.
