Cucina’s Curried Chicken and Fruit Salad

Salad:
3 lbs. boneless chicken breasts, cooked and cubed in 1″ pieces
1 stalk celery, cut on diagonal into thin slices
1 lb. red grapes, cut in half
1 C. chopped walnuts
2 C. golden raisins or sun dried cranberries
2 bunches green onions, sliced on diagonal

Dressing:
2 C. Mayonnaise
1/2 C. rice wine vinegar
1/4 C. vegetable oil
1/2 C. sugar
1/2 C. apricot jam
2-3 Tbsp. curry powder
1 Tsp. salt
1 Tsp. ground white pepper


1. Place all ingredients for salad in bowl. Toss well.

2. In a medium bowl, whisk all dressing ingredients. Toss into salad. Mix
well.

3. Place salad on bed of greens with wedge of fresh pineapple, bunch of grapes
and fresh berries.


Serve with a wonderful crunchy bread and you have a meal!
