Cucina’s Spicy Corn and Bean Fiesta


2 bags frozen corn kernels, thawed at room temperature
15 oz. can black beans, drained and rinsed
1 small red pepper, diced
1 small green pepper, diced
1 small red onion, diced
1 bunch fresh cilantro, chopped
1 jalepeno pepper, cored and diced
Juice of 1 lime
1/2 T. chili powder
1/2 T. cumin powder
1/2 T. sugar
1/4 C. white wine vinegar
1/2 C. vegetable oil
1 tsp. salt


1. Combine all ingredients in a bowl.
Toss Well, taste for seasoning.

2. Chill 1 hour before serving
