Dinkum Chili


1/2 lb bacon, cooked, blotted on paper towels and diced, reserve 1/4 cup fat
2 medium onions, diced
2 stalks celery, diced
2 bell peppers, seeded and diced
2 jalepenos, seeded and diced
1 lb ground beef
1 lb top sirlom or chuck steajk, diced I inch cubes
1 lb picnic pork shoulder, diced I inch cubes
4 cloves garlic, minced
1 tground cumin
1 T oregano, dried
7 T mild chili powder
1 28 oz. can whole tomatoes
32 oz beer
3 T brown sugar

Heat bacon fat m large pot. add onions, celery, green peppers, jalepeno
peppers and garlic. Cook until onions are translucent. Combine all the beef and
pork with the ground chili, oregano and cumm. Cook until meat is evenly browned,
stirrmg occasionally. Add the bacon, tomatoes and 24 oz. of the beer. Bring to a
boil, reduce heat to simmer. Simmer for 1 1/2 hours covered, stirring occasionally.

Stir well, taste and adjust the seasonings if needed, add remaining beer and
simmer for I more hour. Add the brown sugar and simmer for an additional 15
minutes.
