Dutch Oven Roasted Chicken Pizza

To make pizza you will need:
14 inch Dutch oven with lid
pizza peel or paddle
cake pan that fits down inside the oven
charcoals
2 cups mozzarella
1/4 cup Asiago cheese
1 chopped tomato
fresh arugala
*garlic oil
*chicken
*pizza sauce

garlic oil
1/4 cup roasted garlic oil
6 minced garlic cloves
1 tablespoon Asian Chile oil

mix together and cook on lowest heat for 15 to 20 minutes
set aside

Chicken
1 medium red onion chopped into large chuncks
2 skinless chicken breast cubed into 2 inch pieces
3 tablespoons olive oil
2 garlic cloves minced
1/4 balsamic vinegar
salt and pepper to taste

mix all together. Saute’ until chicken is browned but not over cooked.
Add the balsamic vinegar, stir constantly until carmelized. About 2 minutes.
set aside
pizza sauce
18 fresh plum tomatoes with stems and ends cut off
1/3 chopped onion
5 tablespoons olive oil
3 tablespoons butter
8 fresh basil leaves finely chopped
salt and pepper to taste

grind tomatoes in food mill until all juice is through and just pulp remains
discard pulp. Put tomato juice into a 8 quart sauce pan. In a medium skillet,
saut� onion in 3 tablespoons of olive oil until translucent. Add to tomato juice.
Salt and pepper juice to taste. On medium-low heat, reduce down mixture for 2 hours.
When desired thickness has reached, remove for heat and add the butter.
When sauce has cooled, add the basil.

Assembling the pizza

use homemade pizza dough or Rhodes frozen pizza dough. Roll out dough. Brush pan with
olive oil and place dough in it. Brush top of dough with oil. Put one ladle of sauce on dough and spread around evenly.
Add freshly grated mozzarella. Drizzle 1 tablespoon of garlic oil mixture onto cheese. Spread chicken mixture
over pizza. Lightly sprinkle some grated Asiago cheese. Add 1/2 cup chopped tomatoes. Drizzle more garlic oil.

Place pizza pie into Dutch oven.
10 to 12 coals should go under the oven and 35 to 40 coals on top of the oven. Cook approximately 15 to 20 minutes.
Check pizza frequently. When cheese is melted and crust is brown, it is done.

For extra flavor, place pizza on pizza peel and put into smoker or BBQ with wood coals only. Add hickory or alder chips and smoke pizza for 2 to 3 minutes.

Finally, sprinkle chopped arugula on top and serve.
