Muffin Tin Eggs
Method
Preheat your oven to 350 degrees.
6 or 12 eggs
Prepare your muffin tin. Spray with nonstick spray. Place 1 tbsp. water into each space. Then place one egg inside. (If your pan is older, also add 1 tsp. vinegar to the water before placing the egg inside. This will help the egg to congeal or solidify while baking.
Bake 13-15 minutes. The yolk will be soft, but the white will be cooked through and solid. Remove from the oven and gently lift out of the pan with a slotted spoon. Sprinkle with Kosher salt and pepper before serving.
Serve immediately.
Blender Hollandaise Sauce
Ingredients:
- 3 egg yolks
- 1 tbsp. lemon juice
- 1/8 tsp. cayenne pepper
- 10 tbsp. salted butter (if using unsalted butter, then add a pinch of salt to the sauce)
Method
Melt the butter gently, as not to separate the moisture out. Set aside to cool slightly.
Meanwhile in a blender, blend the eggs, cayenne, and lemon juice. Blend only until light and fluffy. Then while the blender is going, slowly add the butter. Blend for 1 minute. Use within an hour to avoid separation of the sauce.

Ingredients
- 2 cups Arugula
- Juice of ½ lemon
- 2 tsp. olive oil
- 1 cup diced cucumber
- 1 cup cherry tomatoes diced
- Thinly sliced red onion
- Focaccia or Sourdough bread toasted

Ingredients

- Smoked salmon
- Thinly sliced red onion
- Capers
- 2 cups arugula
- 1 tsp. lemon juice
- 1 tbsp. olive oil
Family Eggs Benedict Bar
Ingredients
- Grated cheese
- Diced tomatoes
- Bacon crumbles
- Green onions
- Roasted garlic potatoes
- Asparagus
- Spinach
- Roasted sweet potatoes

- English Muffins, Sourdough bread or Focaccia rolls

Method
For all recipes, start with your base. Then layer the bread, meat, egg, sauce and then toppings of your choice or what the recipe calls for.
How come I can’t access the eggs Benedict in a muffin tin recipe? Great segment, but I can’t remember what temp, how much water to add or how long to cook them.
