Filipino Pancit Noodles Fit for a Party

These pancit noodles are a fun party dish.

Pancit is a traditional Filipino recipe. It’s a quick and easy stir-fried rice noodle dish with savory sauce, meat, and vegetables.

KSL Reporter Ashley Moser shares her pancit noodle recipe. Her mom makes this recipe for every party. Ashley says it’s a recipe that reminds her of home and gathering with friends and family.


 

Sandra Sagisi’s Pancit Noodles Recipe

INGREDIENTS

  • 1 lb Pancit Bihon Rice Noodles
  • 2 chicken thighs, thinly sliced
  • 1/4 onion, chopped
  • 1 cup shredded carrots
  • 1 stalk celery, finely chopped
  • 1/2 small cabbage, chopped
  • 1 cup snow peas
  • 3 cloves of fresh garlic, minced
  • 4 1/4 cups of chicken broth
  • 3 tbsp Oyster Sauce
  • 3 tbsp Silver Swan Soy Sauce
  • Melt 1 tsp Hawaiian Salt in 1/4 cup water
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup fresh green onions, chopped
  • Fresh cracked pepper
  • Secret ingredient: 3 squirts of Italian Dressing
  • 4 small Calamansi or one lemon, sliced into wedges

INSTRUCTIONS

Frying Pan #1

  1. Coat pan with vegetable oil on medium heat
  2. Sauté 1 clove of minced garlic until golden brown
  3. Add chicken and onions, stir fry for 4 minutes
  4. Add 1/4 cup of chicken broth
  5. Set aside

Frying Pan #2

  1. Coat pan with vegetable oil on medium heat
  2. Sauté 2 cloves of minced garlic until golden brown
  3. Stir fry carrots, snow peas, and celery for 4 minutes
  4. Add melted Hawaiian salt mixture to veggies
  5. Sprinkle a pinch of pepper and Oyster Sauce over veggies
  6. Add 1 cup chicken broth, let simmer
  7. Add snow peas and cabbage and cook for 2 minutes
  8. Remove all the veggies from Frying Pan #2 and set aside, leaving liquid in the pan
  9. Add Silver Swan Soy Sauce and Italian dressing to liquid in Frying Pan #2, mix well
  10. Add Pancit Bihon Noodles
  11. Add 3 cups chicken broth to cover the noodles, cook until liquid evaporates, and noodles are soft

Mix Crunchy Veggies and Meat

  1. To noodles add meat and its juices from Frying Pan #1 and simmer for 3 minutes
  2. Transfer noodles to a platter, mix in crunchy vegetables

At the dinner table

  1. Sprinkle cilantro and green onions over Pancit
  2. Dress with calamansi or lemon
