Fresh Berry Trio

Three new ways to enjoy the seasons best berries.
Fresh Berries, Lemon, and Basil Bruschetta with French Goat Cheese and Cinnamon Crostini
1/2 c. chopped raspberries
1/2 c. chopped blackberries
1/2 c. chopped strawberries
1 T fresh lemon juice
2 t. sugar
Zest of half lemon
2-3 purple basil, or regular basil snipped
French Goat cheese
I long baguette, thinly sliced into rounds
Butter
Mixed Cinnamon and sugar

Place berries in a medium sized bowl. Add lemon juice, sugar, zest, and basil. Toss to mix.
Set aside.

Lightly Butter baguette rounds, sprinkle evenly with cinnamon and sugar.
Place on a baking sheet and broil on high for 2-3 minutes or until lightly browned.

Spread a small amount of cheese onto toasted bread, top with fresh berries.

Makes about 6 servings
Fresh Berries and Basil Lemonade Spritzer:
1 recipe berry mixture
6-8 T fresh lemon juice
6-8 T super fine sugar
Sparkling water
Crushed ice

Place 2-3 tablespoons berry mixture into individual glass. Using a muddler or a wooden
spoon, crush berry mixture. Add lemon juice and sugar. Stir to mix.
Add crushed ice and pour sparkling water to fill glass. Gently stir and garnish with mint.

Makes 6-8 servings
Berries and Lemon French Cream with Assorted Fresh Fruits
1 1/2 c. powdered sugar
1 c. heavy whipping cream
8 oz. Mascarpone or cream cheese
1/2 t. vanilla
3/4 c. berry mixture

With an electric mixture, beat cream cheese and powdered sugar together until smooth.
Add vanilla. Slowly pour whipping cream into cheese mixture while beating on high.
Scraping bowl as necessary. Beat until light and fluffy. Add berry mixture, and mix until
just blended.

Serve with assorted fresh fruits.

Makes about 3 cups
