Grilled Lobster Sandwich

4 ounces raw lobster meat
2 slices whole berry wheat bread
1 tablespoon olive oil
½ teaspoon lemon juice
pinch fresh cracked pepper
½ clove garlic, crushed
½ teaspoon parsley, chopped
½ teaspoon fresh rosemary, chopped
1 tablespoon red onion, chopped

Combine all of the above ingredients, except for the bread, and place in a zip lock bag. Refrigerate for one hour.

Sauce Ingredients:

  • 2 tablespoons mayonnaise
  • 1 teaspoon capers, chopped, with juice
  • salt and pepper to taste

    Method: Combine all of the above ingredients and set aside

    Method for Sandwich: In a sauté pan over medium-high heat, cook the lobster mixture for one minute per side. Toast the wheat bread and spread with the caper sauce. Add the lobster mixture to the bread, and butter leaf lettuce and ripe tomato slices as desired, and serve.
