Halibut Tacos


4 2-ounce halibut fillets
1/2 cup milk
1 egg
1 cup flour
4 blue corn tortillas
1/2 cup jack cheese, grated
1 small tomato, diced
1/2 cup lettuce, shredded
1/4 cup salsa
8 thin slices of cucumber
1 cup vegetable oil


In a small mixing bowl, combine the egg and milk. Dip halibut fillets in the egg-milk mixture and then dredge in flour.

Heat the oil to 325 degrees and cook the halibut fillets until golden brown.

Place grated cheese in the center of each tortilla. In a large non-stick pan, warm the tortillas over medium heat until the cheese is melted. Remove from heat.

To assemble each taco:

Add the cooked halibut fillet, shredded letuce, tomato, cucumbers, and salsa. Fold the tortilla over.

Serve with rice and beans. Serves 4
