Jelly Muffins


1 3/4 cups all-purpose flour
1/4 cup granulated sugar
2 teaspoons baking powder
1/2 teaspoon salt
1 egg, beaten
3/4 cup milk
1/3 cup vegetable oil
Jam or jelly of choice


Add flour, sugar, baking powder, and salt together in a bowl and mix well. Set aside. Mix together egg, milk, and oil. Add egg mixture all at once to the flour mixture and gently stir just until ingredients are moistened. Batter will be lumpy.

Line a muffin tin with foil bake cups. (Recipe makes approximately 8 muffins). Fill each cup 1/3 full with batter. Using a spoon, place a small mound of jam or jelly in the center of each cup on top of the batter. Using the remaining batter, cover the jam or jelly filling the cups to 2/3 full. Sprinkle tops with granulated sugar if desired.

Bake at 400 degrees for 20-25 minutes or until golden brown. Remove from pans and serve warm.
