KSL Cooks: Andrew Wittenberg’s Mexican Street Tacos

Andrew Wittenberg shares how he makes authentic Mexican Street Tacos.

Authentic Mexican Street Tacos
1 lb skirt steak
1 white onion
1 bunch cilantro
desired salsa or pico de gallo
chili powder
small round corn or flour tortilla shells

Preheat skillet to medium-high heat, add olive oil to coat bottom of pan.

Coat all sides of skirt steak with olive oil, salt, pepper, cumin, chili powder and paprika.

Finely dice white onion and rough chop cilantro.

Sear steak 3-4 minutes on each side until desired temperature.

Pull steak and let rest for 5 minutes, then cut into ¼” strips across the grain.

Warm tortillas on gas stovetop, in oven, or on the grill.

Add steak, onion, salsa and top with cilantro to the tortillas.
