Light n’ Hearty: Chicken Parmesan Skillet Dinner

Chicken Parmesan can be a filling and healthy meal.

We love a dinner that’s fast. Make it healthy too and it’s a permanent add to the rotation! This chicken parm is the classic dinner favorite with a lighter twist. Instead of pasta, serve it over green beans!

Wendy Paul shares how to make it all cohesive and delicious. You won’t be serving your chicken parm over plain old green beans. Mix them up with a little garlic for maximum flavor.

Chicken Parmesan Skillet With Garlic Green Beans

Ingredients

  • 10” oven proof skillet
  • Olive oil
  • 1 ¼ lbs. or ½ bag Garlic Parmesan Wyngz (Walmart)
  • 14 oz. can crushed tomatoes
  • 1 tsp. freeze dried oregano
  • ½ cup fresh mozzarella
  • ¼ cup Parmesan cheese
  • Fresh parsley or basil
  • 1 lb. green beans fresh or frozen
  • 2 tbsp. butter
  • 1 tsp. garlic powder, or 2 garlic cloves, minced
  • Kosher salt
  • Black pepper

Directions

Preheat your oven to 400 degrees.

Drizzle some olive oil into the skillet. Place the chicken wyngz into the skillet and bake for 17-20 minutes until golden and tender.

Remove the skillet from the oven carefully. Place on a hot pad or the top of your stove.

Prepare the sauce. Mix the oregano with the crushed tomatoes. Set aside.

Move the chicken to the middle of the skillet. Then top the cooked chicken with the red sauce.

Melt the butter and garlic in the microwave or small sauce pan. Place the green beans into the sides of the hot skillet and add drizzle with the warm garlic butter.

Top the skillet with the fresh mozzarella and Parmesan cheese and place the entire skillet back into the oven and cook for 8-10 more minutes. Top with fresh basil and parsley and fresh black pepper. Serve hot. Makes 5-6 servings.
