6″ Flour tortillas
2 Six ounce fresh Mahi filets
1/4 cup blackening spice
2 tablespoons + 1/2 teaspoon vegetable oil
1/2 cup chopped onion
1 tablespoon fresh cilantro, chopped
Your favorite salsa
In a heavy skillet on medium high heat, add the 2 tables of oil and heat
until hot, but not smoking. Dredge Mahi filets in blackening spice and
place in skillet. Cook for 3 to 4 minutes per side, until bronzed on
the outside. Set aside.
In a clean frying pan, add 1/2 teaspoon oil and heat until hot. Heat
flour tortillas in oil on both sides until hot.
Add 1/3 of Mahi filets to hot tortilla, and add onion, cilantro and
salsa to taste.
