Mediterranean Turkey Burgers

It’s your favorite summer barbecue meal, without all the extra calories! Turkey burgers are a great alternative to the traditional burger.

Mediterranean Turkey Burgers

Ingredients

  • 2 lbs. ground turkey
  • 2 green onions, diced
  • 1 tsp. salt
  • 1 tsp. Basil paste or fresh chopped basil
  • Roasted red peppers
  • 1 cucumber
  • 1 red onion, sliced
  • 2 cups spinach
  • Ciabatta rolls, toasted or grilled
  • Tomato Jam

Yogurt sauce:

  • 8 oz. Greek yogurt
  • 4 oz. feta cheese
  • 1 tsp. dried dill
  • 1 lemon juiced

Directions

In a large bowl, combine the ground turkey, diced onions, salt, and basil. Combine just until onions and seasonings are evenly throughout the meat. Then shape into 6-8 patties. Grill or cook on a large skillet over medium high heat, 3-4 minutes on each side until juices run clear.
Make the sauce. Mix together the yogurt, feta, dill and lemon juice. Set aside.

Assemble your burgers. I like to serve them open faced. But it’s easier to put a top on for little kids to eat. Toasted bun, Tomato Jam, patty, spinach, roasted peppers, cucumbers and red onions. Then place a spoonful of lemon feta sauce on top. Serve warm with grilled vegetables or fries on the side.
