Mexican Meatloaf


1 lb. lean ground beef
1 sleeve saltine crackers, finely crushed
1 egg
1/2 tsp. pepper
1 tsp. salt
1/2 tsp. garlic powder or one clove garlic minced fine
1 cup salsa (mild or hot)
1 Tbl. prepared mustard
2 cups cheddar cheese, grated


Mix the ground beef with the cracker crumbs.

Add egg, pepper, salt, garlic powder and 1/2 of the salsa. Mix well.

Shape into a loaf and place mixture between two sheets of waxed paper. Roll out keeping a rectangular shape. Roll until meat mixture is approximately 1/4 inch thick.


Remove top layer of the waxed paper and sprinkle the meat with the grated cheese, leaving about 1/4 inch around the sides.

Roll up the meat as you would a jelly roll and press together all open ends. You should have a loaf shape.

Place in a loaf pan and bake at 350 degrees for 45 min. (Cover with foil if necessary to prevent over-browning.) Remove from oven and drain off any excess fat.

Spread the mustard over the top of the loaf. Spread the remaining salsa over the top and bake 15 min. longer.

Let set for 15 min. before slicing. Serves approximately 8.
