Nanaimo Bars
Layer 1
½ cup butter
¼ cup white sugar
1 egg
1 tsp vanilla
5 Tbsp cocoa
2 cups graham cracker crumbs
1 cup unsweetened coconut

Layer 2:
¼ c. soft butter
2 c. powdered sugar
3 Tbsp. milk
2 Tbsp. custard powder

Layer 3
5 oz. semi-sweet chocolate
1 Tbsp.

Layer 1: Put better, sugar, egg, vanilla and cocoa in top of double boiler over medium heat. Stir with whisk until mixture is slightly thickened, about 5 minutes. Remove from heat. In bowl, stir together crumbs and coconut. Pour hot mixture over crumb mixture; mix. Press into baking pan; be sure it is well packed. Put in refrigerator for 10 minutes.

Layer 2: Blend the soft butter, powdered sugar, milk and custard powder in bowl until smooth. Spread carefully over the first layer. Return to refrigerator for 10 minutes.

Layer 3: In clean, dry top of double boiler place chocolate and butter. Place over water in bottom part of boiler. Put on medium heat until chocolate is melted. Do not allow water to boil, or chocolate will harden. Spread chocolate gently over second layer. Shake pan gently to spread chocolate evenly. Chill until firm.
