Oven Omelet


1 cup ham, diced or cooked bacon, sausage
1 can (4 oz.) mushrooms
1 Roma or paste tomato, chopped
1 cup Cheddar cheese, grated
1 cup Mozzarella or Monterey Jack cheese, grated
6 eggs
1 cup sour cream
salt and pepper to taste
1 cup salsa
black olives to garnish, optional
parsley to garnish, optional


Butter a 9 x 13 pan (or comparable casserole dish). Spread ham, mushrooms, tomatoes, and cheese over bottom of pan. Beat eggs well, add sour cream and mix well. Add salt and pepper to taste. Pour egg mixture over filling. Bake at 350 degrees for 30-40 minutes or until set in center. To check for doneness, insert knife in center of omelet, if it comes out clean – it’s done!

Cut into wedges, squares, or triangles. Garnish with olives and parsley and serve with salsa. To make this a complete breakfast, serve with fresh fruit, a glass of low fat milk, toast or a muffin.
