Pam Gardner’s Spinach Chicken Salad

½ C Honey
¼ C Red Wine Vinegar
1 Clove garlic, minced
½ t Ground Cumin
1 C Extra Virgin Olive Oil
Ground White Pepper to Taste
½ C Red Cabbage, Shredded
10 oz. Baby Spinach, Washed and Drained Well
½ C. Dried Cranberries (Craisins)
2 C Chicken, Cooked and Diced
¼ C Almonds, Slivered or Sliced

Combine all the dressing ingredients in a blender. Mix well and set aside for about an hour. Combine and toss the salad ingredients together well. Place salad on individual plates and pass dressing around to be drizzled over the salad at the table.
