Pan Tacos


2 pounds lean ground beef
1 onion, chopped
1 jar (approx 28 oz.) salsa
9 flour tortillas*
1 pound cheese, grated
1 bell pepper
1 tomato
Shredded lettuce, optional
Sour cream, optional


* Use a deep flat-bottom pan, the diameter of the tortillas. Dutch ovens work great for this recipe.

Brown together ground beef and chopped onion. Drain excess fat. Add salsa to the meat, stir well, cover and simmer 10 minutes. Remove all but approximately 2/3-cup meat mixture from pan. Spread remaining mixture over entire bottom of pan. Place 3 tortillas over meat mixture. Spoon 1/3 the reserved meat mixture over tortilla, sprinkle with 1/3 the grated cheese. Repeat steps to make three layers. Cut tomato in wedges and arrange on top tacos. Cut shapes or strips from green pepper and arrange with tomatoes. Cover pan and heat through on low heat; do not burn. (May be baked in oven or micro-waved until heated through).

Serve on a bed of shredded lettuce with additional salsa and a dollop of sour cream, if desired.
