Pear & Grilled Chicken Salad


4 cups mixed greens (spring mix)
2 Bartlett pears, cored and thinly sliced
2 whole chicken breasts, grilled and cut into 1/2 inch thick strips
1/4 cup crumbled feta cheese
1/4 cup dried cranberries or fresh pomegranate seeds
1/4 cup walnut or pecan pieces

Dressing:
zest and juice of one orange
1/4 cup white wine vinegar
1/2 cup vegetable oil
1 T. sugar
1 tsp salt
1/4 tsp black pepper


In a large decorative flat platter, place the greens. Place sliced pears in
circle around perimeter. Place the sliced chicken in center. Sprinkle the
cheese, cranberries and nuts over chicken and pears.

Whisk all ingredients for dressing in small bowl. Drizzle over salad when
ready to serve.
