Pumpkin Cheesecake Parfait
1 cup gingersnap cookie crumbs
8 oz. cream cheese
1/2 cup marshmallow fluff
1/4 cup brown sugar
1 teaspoon vanilla extract
14 ounces pumpkin puree
1 teaspoon cinnamon
1/2 teaspoon ground ginger
1/2 teaspoon ground nutmeg
1/4 cup candied pecans
sweetened whipped cream for garnish (optional)
Process the cream cheese, sugar, marshmallow fluff and vanilla in a food processor until
smooth. Add the pumpkin puree, cinnamon, nutmeg and ginger. Mix until smooth.
Layer four 1/2 cup capacity glasses starting with half of the gingersnap crumbs then half of
the cheesecake mixture, repeating and ending with the cheesecake mixture.
Refrigerate until firm (about 1/2 hour). Garnish with a gingersnap cookie just before
serving. Serves 4.
Faux Fried Ice cream
1 cup sliced almonds
2 Tablespoons butter
dash of salt
1 cup brown sugar
1 1/2 cups shredded sweetened coconut
2 1/2 cups Rice Chex cereal, crushed
1/2 cup butter, melted
1/2 gallon vanilla bean ice cream
Saute almonds in butter over medium heat until lightly browned. Lightly salt and cool on
paper towels. Stir together cooled almonds, brown sugar, coconut, crushed Rice Chex, and
Let ice cream soften slightly. Form ice cream balls with a scoop. Roll each ball in
almond/chex mixture until well-coated and place on a baking sheet in your freezer. When
finished, cover tray with plastic wrap and keep frozen. Serve with your favorite hot fudge
and/or hot caramel toppings. ENJOY!
Cherry Greek Yogurt Parfait
Cherry Puree (addicting! Available at Orson Gygi)
Cherries (frozen or fresh)
Granola (splurge and buy some good stuff, or use your favorite homemade recipe)
Mix cherry puree into Greek yogurt according to taste. Layer in tall glasses: yogurt,
cherries, granola – then repeat. These can be made and stored in the refrigerator – the
granola will just be a little chewier than if assembled and served immediately.
