Poached Halibut


3 cups water
1 tablespoon salt
juice of 1/2 lemon
1 pound fresh asparagus, trimmed
1 teaspoon olive oil
4 6-7 ounce halibut filets

For Asparagus:



Over high heat, bring bring water and a pinch of salt to a boil. Add asparagus
and boil for 2 minutes (water should just cover asparagus). Remove asparagus
from water and set aside.
For Halibut:



In a medium saucepan over high heat, bring water, salt and lemon juice to a
boil. Next, place halibut filets in boiling water and turn heat down to medium.
Poach for 7-8 minutes. Remove from water, drain, place on serving plates and
top with cooked asparagus. Drizzle lightly with olive oil and serve.
