1/2 gallon of water
1 teaspoon of salt
2 – six to eight ounce boneless, skinless salmon filets
Bring water to a boil and add salt. Add salmon filets and cook for six minutes. Remove for water.
May be served warm or chilled.
1 large tomato, diced
1 medium cucumber, skinned and seeded, diced fine
1/2 jalapeno pepper, seeded and diced fine
1/2 green pepper, ribs and seeds removed, diced fine
juice of one lime
pinch of salt
2 tablespoons fine diced red onion
1/2 teaspoon cumin
2 tablespoons chopped, fresh cilantro
Combine all of the above ingredients one to two hours before serving.
Serve on top of salmon.
