Rosemary Halibut with Citrus Sauce

Halibut
2 six ounce Halibut filets
2 sprigs of Fresh Rosemary
1 cup all-purpose flour
1 tsp. salt
1/2 tsp. fresh crushed black pepper
2 Tbl. salad oil


Combine salt, pepper and flour. Set aside in a heavy saute pan over medium heat, add oil. Stick one sprig of rosemary in each halibut filet and coat with flour mixture. Place in saute pan and cook for 3 to 4 minutes per side.
Citrus Sauce
1/4 cup chicken stock
1/8 cup butter
juice of one grapefruit
juice of one orange
juice of one lime
1/2 tsp. orange zest
1/2 tsp. lime zest


In a heavy sauce pan over medium heat, and the juices and chicken stock. Reduce by half (about 10 min). Add butter and zest and cook until butter is almost melted. Pour over halibut filets and serve.
