Salmon Salad

1 pound cooked chilled salmon
1/2 C. mayonnaise
1/4 C. red onion, diced
1/2 C. celery, diced
2 Tbsp. black olives, chopped
1 Tbsp. salt
1/2 tsp. white pepper

Combine all ingredients.

Serve as a salad with mixed greens and tomato, or serve as a sandwich on
sourdough bread with lettuce.
Ginger Salmon Pasta
1/2 pound cooked salmon
1 1/2 pound cooked pasta (best with flat noodles)
3/4 C. snow peas
1/2 C. heavy cream
1 Tbsp. salt
1/2 Tbsp. white pepper
1 Tbsp. fresh ginger, finely grated
1 Tbsp. parsley, minced
1 Tbsp. olive oil

Place the olive oil and ginger in a heavy saute pan over medium-high heat and
cook for one minute. Add the cooked salmon and snow peas and cook 1 1/2 to 2
minutes. Add cream and cook for 3 minutes. Add hot pasta and cook for one
minutes. Add parsley and serve.
