Santa Fe Chicken


4 whole chicken breasts, grilled or poached, cut into 1/2 inch strips
3 cucumbers, striped, cut in half and seeded
1 yellow bell pepper, cored and thinly sliced
2 red peppers, cored and thinly sliced
1 red onion, peeled and thinly sliced
1 bunch cilantro, chopped
4 cups mixed greens

Dressing:
juice and zest of one orange
juice of two limes
1 bunch green onions
1 jalapeno pepper, cored and chopped
2 T. cumin
1/2 tsp red pepper flakes
1 tsp. salt
1 tsp. black pepper
1/2 cup vegetable oil


Place all ingredients for salad, except greens in a mixing bowl. Toss well.
In separate small bowl, whisk all ingredients for dressing. Toss into salad.
Place mixed greens in serving bowl. Top with salad. Decorate with edible
flowers, sliced peppers or pumpkin seeds.
