Shoo-Fly Pie


2 9 inch unbaked pie shells
2 1/2 cups flour
1 3/4 cups brown sugar
1/2 cup butter
2 teaspoons baking soda
1 1/2 cups hot water, not boiling
2 cups Dixie sorghum or unsulphured molasses *
2 eggs, beaten
Vanilla ice cream, to compliment pie


Line 2 pie plates with unbaked pie crust, flute edges. Set aside.

Mix together flour, sugar, and butter until crumbly. Set aside about 2 1/2 cups crumbs for topping.

Dissolve soda in hot water. Combine with sorghum or molasses, beaten eggs and remaining crumbs. Pour mix into pastry lined pie plates. Sprinkle reserved crumbs on top. Bake at 400 degrees for 10 minutes; reduce heat to 350 and bake 30 minutes longer.

Serve warm or cold with a scoop of ice cream.

* NOTE: Sorghum or molasses may be substituted in whole or part with dark corn syrup. Molasses produces a fuller, more traditional flavor.
