Skillet Stew


1 tablespoon oil
1 1/2 pounds boneless pork loin
3 tablespoons flour
2 cups broth, or water (broth has more flavor)
1/4 cup ketchup
3 cups red potatoes
2 cups green beans, fresh, frozen, or canned salt and pepper, to taste


Cut pork into bite-size pieces. Heat oil in skillet. Add meat to skillet
and brown. Do not burn, but the more brown the meat and juices the richer
the gravy. Add flour and stir to coat meat. Slowly add broth, stirring
constantly to prevent lumps. Add ketchup. Scrub potatoes, do not peel, cut
into bite size pieces. Add potatoes and beans to stew. Cover and simmer
10-15 minutes or until potatoes are tender. Stir occasionally. Serve hot
with crusty warm bread.

LOW-FAT NOTE: Fat may be reduced to 6 grams per serving by using 1 pound
“lean” meat, and non-stick vegetable spray rather than oil.
