Spiced Holiday Game Hens


Zest and juice of 1 large orange
2 cups cranberry juice
1 cup honey
1 tsp. ground coriander
1 tsp. ground cinnamon
1 tsp. ground allspice
¼ tsp. cayenne pepper
4-6 large cloves garlic, smashed
4 game hens, cut in half
1 tsp. kosher salt
½ tsp. ground black pepper
Garnish:
seeds of 1 pomegranate
1 cup chopped nuts of choice


In a medium bowl, combine the orange zest, juice, cranberry juice, honey, coriander, cinnamon, allspice, cayenne pepper, and garlic cloves; stir well. Divide mixture in half; marinate the hens in one half of the liquid for 1-8 hours.

Drain off the marinade, and roast the hens, skin side up, for 25-30 minutes in 350 degree oven.

In a small pan, heat the remaining marinade until thickened slightly. When hens are done, drizzle with thickened sauce, sprinkle with pomegranate seeds and nuts and serve at once. Serves 4-8.
