2 cups heavy cream
1/2 cup sugar
1 envelope gelatin
1/2 cup milk
8 oz. sour cream
1/2 tsp. vanilla extract
1 cup pureed fresh strawberries
2 cups mixed berries (strawberries, raspberries, blueberries, blackberries)
fresh mint sprigs
In a medium saucepan, heat the cream and sugar until just warmed through, not boiling. In a small bow, combine the gelatin and milk. Allow the gelatin to “bloom” until softened, about 4-5 minutes. Stir the gelatin mixture into the cream, whisk in the sour cream, vanilla extract and the pureed strawberries. Pour the cream mixture into 8 goblets or martini glasses. Refrigerate for at least 2 hours to allow the gelatin to set up. Top with fresh fruit and mint sprig. Serves 8.
