Studio 5 Recipe Box: Ham Jalapeno Fritters

Ham Jalapeno Fritters

Ingredients

  • 1 cup all purpose flour
  • 1 heaping tsp. of baking powder
  • 3 eggs
  • 2-3 tbsp. milk (this batter will be on the thicker side)
  • 1/2 cup pickled jalapeno
  • 2 green onions diced
  • 2 cup shredded roasted ham or deli ham
  • 1/4 cup sharp cheddar chunks, shredded or Parmesan cheese (optional)
  • Oil for frying

Directions

Preheat your skillet over medium low heat with about 1-inch of oil to fry the fritters in.

While the skillet is heating, combine in a large bowl, flour, baking powder, eggs, milk, jalapeno, green onions, and shredded ham. Add the cheese too, of course that’s optional. Combine the ingredients just until it all comes together, being careful not to over work the batter.

Let the batter stand for 5 minutes, before frying. I used my trusty cookie scoop to place the ham and jalapeno batter into the hot skillet with oil. (1/4 cup scoop) The oil would be about 350 degrees is the optimal temperature for frying. Make sure not to crowd the pan, I cooked 4-5 fritters at a time.

After 2-3 minutes, check color of the fritter, a nice darker golden it what you are looking for. Gently flip the fritter over to continue cooking on the other side, for about 2 minutes. Remove the fritters, onto a wire rack or paper towel, to drain and cool slightly before serving. Repeat until all the fritters are cooked. These fritters are great with a side of ranch dressing.
