2 six-ounce sturgeon filets
2 tablespoons macadamia nuts, crushed
2 tablespoons Japanese bread crumbs
3 tablespoons flour
salt and pepper to taste
olive oil

Brush both sides of sturgeon with olive oil. Combine nuts, flour, bread crumbs, salt and pepper and press both sides of sturgeon into mixture until well coated.

Bring a sauté pan to medium-high heat. Place a small amount of olive oil in pan; bring to temperature and cook sturgeon 3 to 4 minutes per side.

Sauce Ingredients:

  • ¼ cup soy sauce
  • 1 tablespoon fresh ginger, sliced
  • 1 tablespoon brown sugar
  • pinch of crushed chilies
  • 1 tablespoon green onions, chopped
  • juice of one orange


    Combine all of the above ingredients and bring to a boil. Spoon over fish and serve.
