Summer Grilling with Harmons

Grilled Chicken Sliders
12 chicken tenders
12 slider buns
Spice Mix: use equal parts of spices
Garlic powder
Onion powder
Paprika
Ginger powder
Turmeric powder
Allspice
Sea salt

Rub chicken tenders with spice rub 30 minutes before
grilling.
Heat grill to medium high heat.
Grill tenders 3-4 minutes on each side.
Serve with toppings bar and slider buns.
Serve with Balsamic Onion Jam or Grilled Corn and Strawberry
Salsa (recipes below)

Pineapple Shrimp Skewers
24 pineapple pieces, bite size
24 shrimp, peeled and deveined with tail on
24 small skewers


Place shrimp then pineapple on skewers.
Grill for 2-3 minutes on each side.
Serve with Sweet and Spicy Asian Glaze (recipe below)

Grilled Corn and Strawberry Salsa
3-4 tomatoes, diced
1 small white onion, diced
1 jalapeno, seeds removed & minced
1 bunch cilantro, leaves, minced
1-2 garlic cloves, minced
1 cup strawberries
2 ears corn kernels, grilled
2 limes juice & zest
½ orange juice & zest
1 tablespoon cumin
2 teaspoons coriander
2 teaspoons sweet paprika


Heat large sauté pan to medium high heat.
Add butter, olive oil and onions.
Turn heat down to medium-low heat.
Slowly caramelize onions.
This will take about 30 minutes.
Stir frequently to prevent burning and consistent
caramelizing.
Add balsamic vinegar and sugar.
Again simmer and reduce for 30 minutes until thick.
Store in airtight container.

Balsamic Onion Jam
2 lbs. onions, thinly sliced
3 cloves garlic, minced
1 tablespoon butter
1 tablespoon olive oil
½ cup balsamic vinegar
1 tablespoon sugar

Heat large sauté pan to medium high heat.
Add butter, olive oil and onions.
Turn heat down to medium-low heat.
Slowly caramelize onions.
This will take about 30 minutes.
Stir frequently to prevent burning and consistent
caramelizing.
Add balsamic vinegar and sugar.
Again simmer and reduce for 30 minutes until thick.
Store in airtight container.
Sweet & Spicy Asian Glaze
1/2 cup brown sugar
1/2 cup rice vinegar
1/3 cup chili sauce
1/4 cup fish sauce
1/4 cup Sriracha
1 tablespoon soy sauce
1 tablespoon ginger, minced


Combine all ingredients in medium sauce pan.
On med-high heat bring mixture to a boil.
Reduce heat and simmer until mixture is reduced and thickened.
