Watermelon and Summer Fruit Salad
- 1 mini watermelon, cut into 6 round discs, rind removed about 1/2” thick’
- 1 large peach, diced
- 1 cup raspberries
- 1 cup blue berries
- 1 mango, diced
- ½ cup fresh mint leaves, coarsely chopped
- Juice of 1 orange
- 1 tablespoon canola or vegetable oil
- Pinch of salt
- Mint leaves and edible flowers for garnish
Place the watermelon slices on 6 salad plates.
Fruit compote: In a bowl, combine the peach, raspberries, blueberries, diced mango, chopped mint, orange juice, oil, and salt. Gently toss. Place equal amounts of fruit on the watermelon discs. Garnish with mint leaves and flowers, if desired. Serves 6.
