Tacos de Picadillo (Mama’s Tacos)


Filling:
1 pound ground beef
2 each red potatoes, fine diced
1/4 cup raisins
1/4 cup raw almonds, sliced
3/4 cup yellow onion, diced
salt & pepper to taste
1 cup tomato puree
1 tablespoon vegetable oil


In a heavy sauté pan on medium-high heat, add oil, then ground beef and cook for 2 – 3 minutes.
Add potatoes, garlic and onions and cook for 5 more minutes. Add raisins, almonds, and salt and
pepper and cook for 2 minutes. Drain off oil and add tomato puree.

Salsa Ingredients:

1 cup tomato puree

3/4 cup sliced onion

1 cup water

1 teaspoon salt

Cook ingredients together on medium-high heat for 7 to 10 minutes.

Ingredients:

12 corn tortillas

2 cups shredded lettuce

2 avocados, skinned, pitted & sliced

Method to Assemble Tacos:

Heat tortillas in a non-stick pan or use same pan as beef. Heat 10 to 20 seconds per side and add
meat. Roll tortillas. Place on platter. Top with salsa, sliced avocado & lettuce and serve. Serves 6.
