The Perfect Turkey Sandwich

2 slices whole wheat bread
1 Tbl. of mayonnaise
6 ounces sliced turkey
bib lettuce leaf
salt and pepper to taste

Spread mayonnaise on both slices of bread. Place the turkey on one slice of bread and top with a spoonful of relish, salt and pepper, and a lettuce leaf. Cover with the second slice of bread, slice the sandwich in half and serve.
1 Tbl. butter
1/2 red onion, thinly sliced
1/4 cup orange juice
1/4 cup blueberries, fresh or frozen
12- ounce can whole cranberries
salt and pepper to taste

Place the butter in a small saute pan, add the onions and cook for 2 min. Add the orange juice and cook for one minute. Add the blueberries and cook for one more min. Add the cranberries, salt and pepper and mix well. Remove from heat. Store in an airtight contianer in the refrigerator.
