Toasted Coconut Key Lime Bars
1 cup flour
1 cup crushed graham crackers
1/2 cup toasted coconut*
2/3 cup powdered sugar
1/2 tsp salt
3/4 cup plus 2 tbsp butter
4 eggs, lightly beaten
2 cups sugar
1/2 cup fresh key lime juice
1/4 cup flour
1/2 tsp baking powder
1/4 tsp salt
In a medium sized bowl, stir together flour, cracker crumbs coconut, sugar and salt.
With an electric hand mixer, add butter.
Mix until crumbly; press into a 9″ x 13″ pan. Bake at 350 for 16 – 18 minutes
Whisk eggs together with sugar and key lime juice.
Stir in flour, baking powder and salt. Pour over hot baked crust and bake an additional 18 – 20 minutes. Bake until set , but not browned. Dust with powdered sugar and allow to cool completely before cutting.
* To toast coconut, place shredded coconut in a shallow pan and bake at 375 degrees for 6 – 7 minutes, tossing
occasionally until golden brown.
