Today’s Recipe: Fall Mini-Donuts

Darkly Divine Devil’s Food Donuts
1 1/3 cups flour
¼ cup brown sugar
¼ cup sugar
¼ cup unsweetened cocoa
1 tbsp baking powder
¼ tsp salt
1 egg
½ cup + 2 tbsp milk
¼ cup sour cream
¼ cup butter, melted
1 oz bittersweet chocolate, melted
1 tsp vanilla

Orange Syrup:

2 tbsp fresh orange juice
2 tbsp granulated sugar

Chocolate Ganache Icing:

½ cup heavy cream
¾ cup bittersweet chocolate chips
1 tbsp butter
1 tsp corn syrup
Zest of 1 orange

Decorative toppings:

Mini chocolate chips
Sprinkles
Peanuts
Coconut


In a medium sized bowl whisk together dry ingredients. Set aside.
In a small sized bowl, whisk together, egg and sour cream, add milk, butter, melted
chocolate, and vanilla.
Mix with dry ingredients until well blended.
Pipe batter into donut pan, or donut maker and bake according to manufacturers
instructions.

In a small bowl, stir together orange juice and sugar until it starts to dissolve.
Prick warm donuts, and brush orange syrup over the top half of donuts.

In a medium sauce pan, mix together, cream, corn syrup, butter and orange zest.
Bring almost to a boil. Remove from heat and add chocolate pieces. Stir until smooth.

Place sprinkles on a small baking sheet or plate.
When donuts are cool enough to handle, dip the top half into the ganache.
With ganache side down, gently press donuts into desired toppings.
Turn over and let it rest until icing has set.

Makes about 28 mini donuts

Pumpkin Spice Mini Donuts with Maple Buttercream Frosting
>3 tbsp butter, softened
> 1/2 cup brown sugar
> 1/2 cup white sugar
> 2 eggs
> 1 cup pumpkin puree
> 1/4 cup sour cream
> 2 cups flour
> 2 tsp baking powder
> 1 tsp baking soda
> 1 1/4 tsp pumpkin pie spice
> 1/4 tsp salt

Ina small bowl, whisk together dry ingredients. Set aside.

In a medium sized mixing bowl, beat together butter and sugars.
Add eggs, beat until smooth.
Add pumpkin puree and sour cream, blend until smooth.
Stir in dry ingredients, mix well.

Heat iron, and cook according to manufactures instructions.

Cool and frost with maple buttercream frosting.
Maple Buttercream Frosting
> 1/2 cup butter, softened
> 4 cups powdered sugar
> 1/4 cup milk
> 1/2 tsp maple extract

In a medium sized bowl, beat 2 cups of the powdered sugar, butter, and milk together
until smooth.
Add maple extract. Beat well.
Add remaining powdered sugar, and beat until light and fluffy.

Makes 2 1/2- 3 dozen mini donuts
