Maple Roasted Sugar Pumpkin, Sage, and Jack, Grilled Cheese Sandwiches
1 sugar pumpkin, peeled, seeded, and cut into 1/4 inch pieces
2 tbsp butter, melted
2 1/2 tbsp maple syrup
Fresh cracked pepper and sea salt, to taste
1/2 pound Monterey Jack cheese, grated
4-6 fresh Sage Leaves, snipped
8 slices rustic bread
In a medium sized bowl, toss pumpkin in the melted butter and syrup until well coated.
Place pumpkin pieces evenly on a parchment covered or greased baking sheet.
Salt and pepper to taste.
Bake at 425 degrees for 20-25 minutes.
Heat grill pan to medium heat.
Place 4 slices of bread butter side down on grill.
Top with grated jack cheese, roasted pumpkin, snipped sage, and additional cheese. Repeat
for each slice.
Cover with sliced bread butter side up and cook until both sides are golden brown and
cheese is melted.
