Massaman Curry
1 lb Chicken (skinless, boneless, sliced)(Approx. 1-2 breasts (Can also use beef or pork)
1 Tbsp Vegetable Oil
2 Tbsp Massaman Curry Paste (Hot: 3-4 Tblsp)
1 Can Coconut Cream (13.5 oz)
1 Cup Cooked Potatoes or Sweet Potatoes (Diced)
1 small Yellow Onion (sliced)
1 Cup Chicken Broth
2 tsp Fish Sauce (more or less to taste)
2 tbsp Chopped Peanuts
2 tsp Sugar
1/2 tsp Salt
1/4 tsp Accent (MSG) (optional)
Brown chicken in hot oil in soup pot.
Add curry paste and cook 30 seconds, stirring constantly.
Add onions
Cook 1 min.
Stir in coconut milk and potatoes.
Add salt, fish sauce, sugar, peanuts, and accent.
Stir & Cover and simmer 3 – 5 minutes.
Serve over steam rice.
