3 Summer Drinks to Refresh Your Palate

Time to give some new summer drinks a try!

With longer days and higher temperatures, there really is no better way to celebrate summer than by spending time outside sipping on a deliciously refreshing drink.

3 Refreshing Summer Drinks

Copycat Arctic Circle Lime Rickey

INGREDIENTS

  • 2-literer bottle of Sprite or 7UP
  • 1-2 limes, cut into wedges
  • ice cubes
  • grape snow cone syrup (see recipe below)

Grape Snow Cone Syrup

  • 2 cups white sugar
  • 1 cup water
  • 1 (0.14 oz.) package grape Kool-Aid flavored drink mix

METHOD

  1. In a saucepan, stir together the sugar and water. Bring to a boil and boil for about 1 minute. Remove from heat and stir in the drink mix. Allow to cool completely and store in a container for pouring.
  2. Once the syrup has cooled, fill a glass with Sprite and add as much ice as desired. Pour 2-4 Tbsp. of grape syrup into the glass. Add more or less, depending on how much grape flavor you want. Squeeze a fresh lime wedge or two into the drink and throw the squeezed wedge into the drink for good measure.

 

Strawberry, Mint & Lime Cooler

INGREDIENTS

  • 3 cups fresh strawberries, divided
  • 1/4 cup sugar
  • 1 1/2 cups ice
  • 2 Tbsp. packed small mint leaves
  • 3 cups lemon-lime soda, chilled

METHOD

  1. In a food processor or blender, blend 2 1/2 cups of the strawberries and sugar until smooth.
  2. Pour pureed strawberries into a large pitcher. Slice the remaining 1/2 cup strawberries; set aside.
  3. Just before serving, stir in ice, sliced strawberries, mint leaves, and soda. Pour into individual glasses and serve with a straw.

YIELDS: 4 servings

 

Virgin Mojitos

INGREDIENTS

  • 24 mint leaves
  • 1 large lime, cut into eighths
  • ice cubes
  • 24 oz. Sprite

METHOD

  1. Place 6 mint leaves and 2 small lime wedges in each glass. Using a muddler or handle of a wooden spoon, crush lime and mint to release all the juice.
  2. Pour in ice cubes and 6 oz. Sprite into glasses.
  3. Stir to combine. Serve with a straw and drink immediately.

YIELDS: 4 servings
