Baked Salmon with Julienne Vegetables


1/4 cup butter, softened
3 Tbl. Heinz 57 Sauce
1/2 tsp. garlic, roasted and chopped
1/2 tsp. parsley, chopped
1 tsp. fresh basil, chopped
2 Tbl. olive oil
1/4 cup yellow squash, julienned
1/4 cup leeks, julienned
1/4 cup zucchini, julienned
1 cup potatoes, julienned
1/4 cup carrot, julienned
2 6-once salmon filets
pinch of salt and black pepper


Mix together the butter, Heinz 57 Sauce, garlic, parsley, and basil and set aside.

Place the olive oil in an ovenproof pan. Add the julienned vegetables and the salmon, top with butter mixture, and sprinkle with salt and pepper. Bake at 350 degrees for 8-10 minutes.

Serve with a lemon wedge.
